Xi'an Rougamo is one of the most iconic snacks in Shaanxi province, renowned for its Baiji buns and lard-cured meat. More than just a street food, it is a living symbol of Shaanxi's culinary culture and a delicious link to China's rich history.Its origins can be traced back to the Warring States period with a dish known as "cold meat." The modern version consists of two main components: la zhi rou (braised pork) and Baiji buns (white bun). There are three kinds of meat used in Rougamo: lean fat and thin, and fat skin. The pork is slowly simmered for hours in a rich, spiced broth containing ingredients, resulting in meat that is fatty but not greasy, lean but not dry. The bun is made from semi-leavened dough, and baked in a charcoal oven until it develops a golden, crisp exterior and a soft interior, a style famously described as having an "iron ring, tiger skin, and chrysanthemum heart."In Xi'an, Rougamo is a beloved breakfast and a nostalgic taste of home for locals. It embodies the straightforward and generous character of the Shaanxi people. Today, this "Chinese hamburger" has gained international fame, allowing people around the world to experience the profound charm of the ancient capital through its unforgettable flavor.
